The wine is matured in barrels of several wines for 20 months.
Sidérolithe is a micro-parcel cuvée made from old Cabernet-Franc vines that draw their energy from siderolithic clays.
Serve this wine at 17°C. Decant 3 hours before serving.
Its raspberry and violet aromas and velvety texture are immediately reminiscent of Pomerol.
A straightforward nose of raspberry, cardamom, fern, fresh mint and undergrowth reveals all the finesse of this cuvée.
On the palate, the siderolithic clays impart a velvety texture and impressive depth. An explosion of fresh fruit, with cherry and wild myrtle followed by violet, is accompanied by very precise flavours of sweet spices and dazzling minerality. On the finish, beautiful hints of bacon prolong the tasting experience and give this exceptional cuvée a resolutely racy profile.
It goes perfectly with chilli con carne, curried veal, rabbit in mustard sauce and chipirons in basquaise sauce.
