The fact is that this place, throughout its geography, bears the generosity and fruit of the farming tradition.
These places, we should say, express the subtle diversity of climates and geologies, in a timeless Babel of terroir.
The intelligence of the farmers has slowly and irrevocably come to superimpose itself on the canvas of these variations in profile, to reveal one of the most fascinating wine-growing regions on the planet.
The fact that the remarkable elements of a terroir and its associated grape varieties are so closely interwoven, even to the point of taking on an identity of their own, is incredibly rich in qualitative logic. In Gaillac, the Autan wind blows the Ondenc, while in Jurançon, the Spanish wind concentrates the Manseng, the temperate climate enhances the Merlots and Cabernets of Duras and Bergerac, and finally, the Négrette of Fronton finds the warmth that favours its aromatic expression on the terraces of the Tarn.
Today's winegrowers have seized upon this observation and put its principles into practice on a daily basis, and their current approach ensures that their production is of a level of quality, but above all of sincerity, that is unique on the wine map.
The tools used to reveal these different terroirs are, on the whole, the same: they stem from observation of the vine's environment (soil, plants, micro-climate, etc.) and understanding of it, culminating in the notion of the grape's quality and sincerity being at the heart of the process. In the application of techniques, there is plenty of room for precision, a little intuition, and always a passion for the right gesture that magnifies the fruit and respects life.
When you also realise that strong values such as friendship, a shared history and respect for the terroir are capable of uniting 10 winegrowers, a cider-maker and a distiller around a structure for promoting and distributing their wines, it's clear that, beyond the object, this is the continuation of a human adventure.
